Berry/fruit popsicles with popped quinoa

My kids donโ€™t like quinoa, so I found a clever way to get them eat some of it: berry/fruit popsicles with popped quinoa. In my opinion, popped quinoa tastes a little bit like popcorn or rice crispies. I added a little bit of Himalayan salt after popping the quinoa in a pan.

And.. mission accomplished!ย  My girls even ate the whole bowl of the leftover quinoa after eating the popsicles. ๐Ÿ™‚ My son’s typical respond was “yucky!” (he doesn’t like anything I make anyway ๐Ÿ˜€ ), but at least he ate the berry pop ๐Ÿ˜€

Quinoa is gluten-free and cholesterol-free. It’s also rich in protein, fiber and minerals, which can help you lose weight.

A study (by Harvard Public School of Health) found that eating a bowl of quinoa a day reduces the risk of premature death from cancer, heart disease, respiratory disease and diabetes by 17 per cent.

Hereโ€™s my simple berry pop recipe:

  • 1 cup berries/fruits of choice(I used strawberries, blueberries and mangoes)
  • 1 cup coconut milk (creamy)
  • sweetener of choice ( I used 2 tbs xylitol)

Blend all ingredients in a blender. Pour into moulds and freeze overnight. Add popped quinoa on top.

Enjoy! ๐Ÿ™‚
